It is an ingredient in almost everything I cook. Stir Fry Sauce lends Cambodian flavors to almost every cooked dish; noodles, sesame beef,  chicken , pork or vegetables; its our basic sauce. Using this sauce after you have brazed or blanched,  adding to taste, as the cooking process begins will result in an evenly flavored dish with the flavors of Cambodia, sweet , bitter, salty, all in one sauce; a true short cut.

Cambodian Fried Garlic

The final touch to any cooked dish...

This garlic is a complex and very old recipe. Garlic clove, pan fried in very hot vegetable oil will extract the full flavor of the clove. The concentrate that results is smooth , hearty with no bitterness. This oil is very powerful and can ruin a dish if over used.

Making Fried Garlic is labor intensive. Small batches, made by hand, to monitor temperature, texture of the chopped garlic pieces, and ratio of garlic to oil. Using the right kind of oil, chopping the garlic in the proper direction, and size, waiting until the right time to reduce heat,this skill is a learned tradition passed on in the family for generations. It's an oil that has the traditional proper texture to the garlic pieces(crispy), and the proper flavor in the oil.

Cambodian Chili Oil

Hot , not bitter.. A combination of ingredients that is so much more than just chills and oil.

I developed this sauce as a short cut in my cooking in a busy kitchen. Use only the oil for an increase in heat or use the peppers for texture and hotter hot dishes. This sauce is a fine soup topping, it is equally effective in stir fry. It’s a chili oil like no other!

Cambodian Garlic Vinaigrette

This sauce is a melding of garlic, vinegar, spices, and a lot of love!

Add fresh lemon juice and ground black pepper, spritz over grilled salmon, garnish with spring mix greens. Slice a fresh sweet onion and marinate. Use the vinaigrette for a salad dressing, the onions for an appetizer!
